  Chicken Nacho Supreme
Spice up your Superbowl party with these tasty chicken nachos! Piquant and flavorful, they are a perfect match with our Mettler Old Vine Zinfandel!
 
Ingredients:
4 boneless & skinless Chicken Breast or 6 boneless & skinless Thighs, if you prefer dark meat, or a mixture of both
1/2 cup chopped onions
1 tbsp. olive oil
1/2 tsp. cumin seeds
1/2 tsp. dried oregano
1 can Chipotle chiles, finely chopped
2 tbsp. tomato paste
1 tbsp. Mettler Zinfandel
1/2 cup water
Large corn tortilla chips
1-2 cups shredded Mexican cheese (Sargento, Kraft, etc.)
Sour Cream (optional)
Chopped cilantro (optional)
Your favorite hot sauce


Boil or steam the chicken and shred. Measure approximately 2 1/2 cups of chicken. Preheat oven to 450-degrees. In a 3 quart saucepan heat the oil over medium heat and add the onions, cooking until onions begin to brown (about 6 min.) Add cumin seeds and oregano and cook until fragrant (30 sec) Add chipotle chiles, tomato paste, Zinfandel and water, reducing heat to a simmer, cooking for about 8 minutes to blend flavors together, stirring frequently. Add 2 cups of chicken to the sauce and stir to coat the chicken. ( Add a little more chicken if sauce is too thin, but do not mix in to much that you make chicken dry.)

On a large baking sheet arrange a single layer chips about 24 or so chips. Sprinkle chips with cheese. Spoon on about 1 Tablespoon of Chicken Mixture to each chip.

Bake in a 450 degree oven for approximately 2 - 3 min. until the cheese starts to bubble. Transfer the individual chips to a serving platter and top with Sour Cream, your choice of Hot Sauce, and Cilantro.

Serve warm with a glass of Mettler Epicenter Zinfandel
